To make the podi chutney powder, dry roast chana dal, urad dal, red chilies, and curry leaves until golden brown.
Let it cool and grind into a fine powder. Add salt to taste and mix well.
Heat a dosa tawa and pour a ladleful of dosa batter. Spread it in a circular motion to make a thin dosa.
Sprinkle 1-2 teaspoons of podi chutney powder on top of the dosa.
Add 1-2 teaspoons of ghee on top of the podi powder.
Cook until crispy and golden brown on both sides.
Serve hot with coconut chutney or sambar.
