In a mixing bowl, add the mashed potatoes, mixed vegetables, onions, coriander leaves, ginger-garlic paste, red chilli powder, garam masala powder, turmeric powder, and salt. Mix well.
Divide the mixture into equal portions and shape them into small patties.
In a shallow bowl, mix the cornflour with a little water to make a smooth batter.
Dip each cutlet into the cornflour batter and then roll it in the bread crumbs until coated evenly.
Heat oil in a deep frying pan over medium heat.
Once the oil is hot, carefully drop the cutlets into the oil and fry until golden brown on both sides.
Drain excess oil on a paper towel.
Serve hot with chutney or ketchup.
