Galouti Kebab

Galouti Kebab is a popular Indian appetizer that originated in the city of Lucknow, in the northern state of Uttar Pradesh. It is made by marinating minced lamb meat in a mixture of spices and tenderizers, and then shaping it into patties that are shallow-fried until they are crispy and golden brown. The dish is typically served with onion rings and a side of mint chutney.

The term “Galouti” literally means “melt-in-your-mouth”, which perfectly describes the texture of this dish. The use of tenderizers such as raw papaya and spices like nutmeg, mace, and cardamom, help to break down the fibers in the meat and create a soft and velvety texture.

To make Galouti Kebab, minced lamb meat is marinated in a mixture of spices, including ginger, garlic, coriander, cumin, paprika, garam masala, and chili powder. The meat is then left to marinate for several hours, which allows the flavors to develop and penetrate the meat.

The marinated meat is then shaped into small patties and shallow-fried in a pan until they are crispy and golden brown. The use of ghee, which is clarified butter, adds richness and flavor to the dish.

Galouti Kebab is a dish that is often served at parties and festive occasions in India. It is a favorite among food lovers and is enjoyed with friends and family. The dish can be served as a starter or as a main course with rice or naan bread.
